Blake Shelton and Miranda Lambert broke up. Sadness. I’m actually distraught about it. I love them, both of them, together.
And now I get to speculate why and devise this ridiculous hypothesis (obviously it’s because he’s with other women, duh). But seriously, Bennifer, Kardissick and now Shelbert ?! I think I need some chocolate.
In unrelated news, my weekend was boring. I literally didn’t do crap. Celebrated a birthday (and engagement), cleaned a little, worked out a little and worked a little. Fell asleep outside at my parents house on Sunday and ended up redder than I would’ve liked… There’s something about sleeping outside in the sun. I woke up feeling like I had been asleep for 12 days and was confused af where I was. I swore I had been kidnapped. Nope. Not the case.

On the work forefront – I’m still plugging away at Palmer and training on the side, which has been very fulfilling to say the least. It keeps me motivated and passionate, which is such a welcome relief (been guzzlin’ down copious amounts of coffee though.) I’m in the process of planning some online resources for clients who may be out there in the social-stratosphere that need some extra motivation and push. I have no idea the direction I’m going to go, nor do I want any direction right now, hoping it takes it’s course and something wonderful comes from it. Fingers are totally crossed.
You know what I need? I need a a computer programming & science / graphic design degree. SERIOUSLY. I envy these people. It has to be one of the most frustrating, learn-by-your-mistakes part of my job. I genuinely hate to love it. But I wish I loved it, I wish I was skilled enough to be fully self-sufficient. But I’m not. So, I make do and produce good (but not great) materials that most of the time need to be slightly snipped, poked and fixed. I feel the same way with my blog. I always end up saying, “If only I could program this just how I wanted to, I could…..” Alllll day, errrrrrr day. Someone teach me. I’ll make you treats. Like a barter. Oregon Trail reference, my friends.
Anyways, I made this bomb-ass avocado tuna salad this weekend. I always forget how much I like tuna until I have it like once in a blue moon. What I don’t forget is the price of wild planets tuna. My gawd. It’s almost $5 for a can, but it’s so stinking good (If you’re looking for the best tastin’ tuna, try it out, it’s worth it: this is what I used: Wild Planets Wild Albacore Tuna.) And this is why I have to work two jobs. Ha! (Recipe below.)

Avocado Tuna Salad
Write a review
- 1/2 avocado
- 1 can of tuna (I used this: Wild Planet's albacore tuna
- 1 tsp himyl. pink salt
- 1 tsp. cayenne pepper
- juice from half of a lemon (optional)
- Mash ripened avocado in a bowl
- Mix in canned tuna
- Add salt, cayenne pepper and lemon juice, stir
- Make sure all ingredients are well incorporated, let sit for 5 minutes.
- Scoop, plate, enjoy.
- I enjoyed this with some plantain chips!
- Additional add-ins: raisins, walnuts, diced celery or onion, or salsa
